It would be kind of funny if we suddenly found out Appa was a girl.
I read a silly fan fiction a while ago i think it went something like:
"And at the western Airtemple we all found out that Appa was a she bison because she gave birth to somewhat strange (but totally adorable) offspring which made Katara question Zuko about what really happened under Lake Laogi......"
