Suki is alive. She is a prisoner of Azula's. Azula said as much in black sun part 2. Nothing has been even hinted at her death or impending death since.
And on another note Sokka could not be with Yue due to her engagement to another. With her being part of the moon she is still in some way touchable by Sokka.
